This may sound a little sketchy but it is delicious. It is really called vegetarian chili with the potatoes taking the place of meat. This has been a favorite with our household for a few years now. You can adjust amounts as you see fit.
5 medium sweet potatoes cubed 1/2 inch squares
7 stalks of celery small diced
2 medium onions diced
5 cans of black beans drained and washed (low sodium is great as well)
4 cloves of garlic chopped or 4 tablespoons of minced garlic from jar
6 cans of stewed tomatoes (your choice diced, regular, low sodium)
35 ounces of chicken stock/vegetable stock
Olive oil
Coarse ground pepper
Kosher or sea salt
Chili powder
Cumin
Combine onions and celery in pan with olive oil and cook til transluscent and soft
Add potatoes and continue to soften
Add salt and pepper to your liking
Add chicken stock to completely cover
add tomatoes
Add beans
Add chili powder and cumin to the taste of chili you desire and simmer till potatoes are soft
Serve with topping of your choice (if its a cheat day maybe cheese, sour cream and Frito's Scoops)
This will make about 15 servings maybe more you can tailor to fit your family or single person
about 30-40 minute prep time with dicing etc. I let it simmer for a few hours
