Halibut and Vegetable Special!

Thanks to my good friend PrestigeAlaska, I was blessed with an extremely generous wedding present of fresh halibut and salmon freshly caught in the north Pacific and sent to me direct... This was an amazing gift and truly made my day today... As a result, chef Dylan was in the kitchen at work as we all know that halibut is one of the priciest and high delicacy fish in existence... We were also blessed with the best looking salmon I have ever seen... The Halibut is unlike any other i have ever witnessed... It is amazing in every aspect, from the filet job, the structure and appearance and most importantly, the taste! Halibut is VERY delicate when you can cook it and if you overcook it by literally one minute, it is compromised but if you cook it spot on, as I did with this one, it melts in your mouth... You will see 4 oz. of halibut... Both seasoned with parsely and garlic powder while one also contains lemon pepper seasoning while the other is garlic and herb... Along with it is 1 serving of fresh cut green beans, peas and carrots, seasoned with parsley and garlic powder... All seasonings are sodium free as well... This was so satisfying, I cannot begin to tell you... 4 oz. of halibut contains 125 calories, little to no fat, lower cholesterol than many fish and 24 grams of protein... 50 total calories in the vegetables, a few grams of fiber and protein as well...

Damn, that looks incredible Dylan! I honestly haven't tried halibut, but I'd like to. I love fish when it is the right kind and prepared correctly. Very very nice of Prestigealaska to send you that brother. That is a hell of a guy right there

Yes, you must try this out brother... The thing about halibut is you MUST cook in precisely... You can ruin it so easily but just cooking it a minute too long... 4 oz. cook in about 6 minutes on 350 degrees.... It does not need to be in any longer than that or its compromised and you will be fucking irate for spending so much money on something and ruining it... That's the one thing about it that can turn some off but otherwise, it gets no better aside from lobster in butter... LOL... Halibut is a delicacy though and I absolutely love it...

My fiance is beyond thrilled because she LOVES salmon, which is generally not something I eat but after seeing the ones I just received, trust me, Im making an exception... Talk about absolute perfect cuts of fish... Nothing like I have ever seen... Prestige is the man... This was our wedding gift from him... What a bad ass gift! It was not on our wedding registry, LOL, but damn, Im thrilled
 
So happy you're enjoying it! Be sure to beer-batter at least 1 of those halibut filets. That's my weakness. I use coconut oil to fry it in. And for the beer batter I use a box of any tempura batter mix from the bake aisle of most any grocery store and a beer with kick to it - no light beers! I used a fairly dark porter with my last batch and it was delicious!

that sounds so good... beer batter and beer cheese are just incredible... im sure that is just ridiculous good... another good way is to make parmesan encrusted halibut... that is amazing as well...
