Chocolate Peanut Butter-Stuffed Protein Muffins!

These are basically the same as Rich Piana's Protein Muffins - I've been making them for awhile and they're fucking awesome! About 25g protein per large muffin.

3/4 c. Oatmeal
4 scoops Chocolate whey protein powder
1/4 c. cocoa powder
1 tsp. baking powder
3/4 c. fat-free milk
6 packets Splenda or 3 packets Sweet Leaf Stevia
3/4 c. Apple sauce (no added sugar)
1 tbsp. cottage cheese
2 egg whites

This will make 6 large muffins or 12 smaller muffins.

Mix all ingredients together in a bowl till mixture is wet.
Spray muffin pan with coconut oil cooking spray.
using a ladle, fill half a muffin cup with mixture.
add a tsp. of peanut butter (or a tbsp. if you really love peanut butter like I do)
top off with mixture to top of muffin cup.
Pre-heat oven to 350 degrees and bake for 20 minutes.
Mangia!

Macros/Nutrition Data should look something like this for the 1 tsp. peanut butter (Nuts 'n More High Protein Peanut Spread) per muffin version with lowfat cottage cheese:

Carbs 44%
Fat 17%
Prot 39%

those look absolutely ridiculous... i love the substitution of applesauce instead of canola oil... thats a trick many don't know but it most certainly works! do you have a macro count on this one?

nice, that looks phenomenal... i have tried damn near all the nuts n more peanut butter flavors now... the chocolate peanut butter would be so damn good in this...

I bought the 3-pack after we were discussing them: peanut butter, toffee crunch, and pumpkin spice. Gotta say, pumpkin spice is my fav! You're right though, these muffins stuffed with the Nuts 'n More Choco/peanut butter would be diabolical!
